105.5.34 Mobile Food Preparation Vehicles (Food Trucks)

Specific Responsibilities for Food Trucks:

  • Fire Suppression System: The hood fire suppression system must be inspected and serviced every six months by a licensed technician. The service tag must be current.
  • Hood and Duct Cleaning: The hood, grease removal devices, and exhaust ducts must be cleaned regularly to prevent grease buildup. Maintain a log of cleaning dates.
  • Fire Extinguishers: You must have at least one Class K portable fire extinguisher for cooking grease fires and a minimum 2-A:10-B:C extinguisher for other fires. Ensure they are inspected monthly and have a current annual service tag.
  • LP-Gas Safety: All LP-Gas (propane) cylinders must be secured in an upright position. Regularly inspect cylinders, regulators, and hoses for leaks or damage. Shut off gas at the cylinder when the vehicle is not in use.
  • Generators: Keep generators away from combustible materials and ensure they are properly ventilated. Do not refuel a generator while it is running.
